Mark and I had a fantastic 4th in Huntington Beach. Our friends Steffany and Charlie live there (so lucky!) and they invited us down since the 4th is a HUGE deal to the city. On our way to the pancake breakfast in the park we watched the participants of the 5K head for the finish line. We were on the look out for our boss who was running in the race but we somehow missed him. I'm not sure how seeing as he told us he would be in all black and bright orange running shoes.
After breakfast we walked down to our parade spot. The Szuba family opens up there front lawn to all of their friends to watch the parade go by. We were lucky enough to be welcomed into the group and we got a really good view of the three hour parade. My favorite part was the fife and drums marching band and the look on the Pearl Harbor veterans faces as we all cheered them by.
We headed back to Steffany and Charlie's house to have a BBQ. Steffany made these AMAZING burgers with onions and egg in them. I brought potato salad which always gets compliments. It is because I make the Mennonite cookbook dressing for it. Here is the recipe for those of you who don't have that fantastic guide:
Mix 1 tablespoon flour and 1/2 cup of sugar in bowl. Add two eggs, 1/2 cup vinegar, 1 teaspoon mustard, and 1 1/2 cups water and stir. Melt 2 tablespoons butter (please use real butter) in a saucepan and add the dressing. Cook until thickened. Cool and add to potato salad.
After eating and chit chatting with some very funny company we headed to the beach to watch the fire works. Watching fire works on the beach was AMAZING. I was pleasantly exhausted by the time we got back home. Mark and I agree that it was one of the most eventful and fun 4th of July's we have ever had.
